Peanut butter and jelly sandwiches were a staple in my house growing up. None of those sandwiches, however, tasted as good as these P.B. & J Cupcakes! These are a fun cupcake that kids and adults can both enjoy. They start out with a vanilla cupcake that is filled with your choice of strawberry or raspberry jam. It is topped with a peanut butter buttercream and decorated with chopped peanuts. Who wouldn’t want one of these in their lunchbox?
Spring is here, which means Easter is just around the corner! I am taking orders for Easter Egg Cakes and for Cupcakes. The Easter Egg Cakes serve around 6 people. I recommend a pound cake or a chocolate cake as the base for these cakes.(My Pop-Pop used pound cake.) They pair nicely with the smooth chocolate ganache that coats the top.

The result is this cute little egg cake that would be a perfect dessert for any Easter dinner. This is a chocolate cake that is covered with a chocolate ganache. Any cake flavor could be used here. These cakes are on the small side and feed 4-6 people (depending on how hungry you are!).
I love cheesecake and have never met one that I didn’t like. The thought of putting the flavors of a cherry cheesecake into a cupcake seemed like a no-brainer to me. And boy was I right! This cupcake starts out with a graham cracker crust bottom and a vanilla cake. It is filled with a cherry filling and then topped with a cream cheese frosting. Graham cracker crumbs are sprinkled over the frosting and then a single cherry sits atop this delicious cupcake for decoration.
