Pumpkin Spice Cupcake

There is something about fall weather that makes me crave everything pumpkin. Pumpkin coffee, pumpkin whoopie pies, and pumpkin spice cupcakes are all things I look forward to this time of year.
These cupcakes are made with fresh pumpkin puree and warm spices like cinnamon and nutmeg. They are then topped with a smooth cream cheese frosting.
Pumpkin Spice Cupcakes are perfect for fall gatherings as well as an end to your Thanksgiving feast. And don’t forget, they can also be made into a cake for any occasion.

Lemon Cupcakes

If you are in the mood for something citrusy and refreshing, take a bite into this Lemon Cupcake. You will not be disappointed! This cupcake starts out with my Pop-Pop’s moist lemon pound cake recipe that has bits of fresh lemon zest baked throughout. It is then filled with lemon filling and topped with a fluffy vanilla buttercream. This is the perfect treat to add to any summer gathering.

Chelsy Mae’s Creations now offers cakes! I have been asked many times since I started this business if I make cakes. I have had great responses from several of you who have already ordered cakes from me (thank-you!).  I now offer simple yummy cakes made with buttercream(or other frostings). I do not work with fondant as of now. Many sizes are available, from a 6″ round cake to a half sheet cake.  Call or email to place an order for your special occasion.

Visit my Facebook page for more pictures of cakes I have made.

Coffee Cake Pound Cake

My Pop-Pop was an amazing baker. One of my favorite recipes that he made was his Coffee Cake Pound Cake. It was a signature item for our family at every Christmas and Easter morning get together. I love that I can recreate those great memories that I have of my family, just by baking a batch of this yummy pound cake.

This starts out with a moist vanilla pound cake. When you cut into it, you will find a sweet cinnamon crumb marbled throughout. It is then topped with more cinnamon crumbs and a sprinkling of cinnamon and sugar.

This makes a wonderful addition to any breakfast or brunch spread. If you are not a breakfast fan, this also makes a great after dinner treat.

Oatmeal Bread

One of my favorite smells, in the whole world, is bread baking in the oven. And you may be surprised, but on most days, I would rather have a big slice of fresh, hot oatmeal bread smothered in butter, than a cupcake. Bread is a weakness of mine and my husband, and this Oatmeal Bread is our favorite.

I highly recommend this bread for sandwiches, toast, or my favorite – french toast. Yum!
